"Beef" Stroganoff


Ok, here is my healthy version of Beef Stroganoff. This is actually a recipe that I came up with for the man who said that he was tired of all the "healthy" stuff I was making. What?!? My husband wanted meat and starch.... gotta love the meat n' potatoes men in our lives!!! So here it goes! And he has no idea it's good for him! LOL! My recipe is doubled so that I have left-overs for the following day as well as some to pack in a Food Saver bag to freeze. Always having home cooked healthy meals in the freezer is so convenient for days when I just don't want to cook! And this one is always a winner!

"Beef" Stroganoff (This is a FitterTwit Original)

1 large onion
3 cloves garlic
2 containers sliced mushrooms
1 green bell pepper
2 pounds ground turkey browned in a splash of EVOO with onion, garlic and bell pepper. Set aside.
2 bags of extra wide Ronzoni Healthy Harvest noodles boiled with 2 Tbsp of EVOO in water to keep noodles from sticking, drain when el dente. Set aside.

FOR THE SAUCE
1 32 oz. container of Knudson Free Cottage Cheese (white container)
2 Tbsp. Grey Poupon Mustard
2 1/2 Tbsp. Knorr Beef Base
1/4 C. Skim Milk
Sea salt and black pepper to taste.

In high speed blender combine cottage cheese, mustard, milk and beef base. The sauce should be the color of creamed coffee. If the consistency is too thick, continue adding skim milk a tablespoon at a time until you have desired consistency. I like my sauce to be the consistency of creamy soup as it coats the noodles and meat very well. Add salt and pepper to taste and blend for 30 seconds more. Add mushrooms and heat the sauce in the microwave for 3 1/2 minutes. Combine everything in a large bowl and serve. So yummy! Note: The beef base contains a lot of salt, so be sure to taste the sauce as you go and add sea salt sparingly. I like mine with a TON of black pepper.

Tip: I usually add the sliced mushrooms directly after browning the meat with the other veggies. The mushrooms soften but do not shrivel while I'm making the sauce. The reason I do this is because my high speed blender is a Vitamix which allows me to blend and heat in one step. I LOVE my Vitamix!!! In the interest of organizing my time, the tools that enable efficiency are always the ones I want in my kitchen.
