Almost Too Pretty To Eat!

This meal is beyond delicious, healthy, and what was for dinner last night. This is my Rosemary Chicken with Quinoa and Asparagus. I brush the asparagus with EVOO and dust with sea salt and pepper. I fix the quinoa per the package instructions and then added 1 Tbsp. beef base, onion, cilantro (from my garden!) and diced bell pepper. The chicken is fixed per the recipe from Eating For Life which just happens to be my all time favorite cookbook. The recipe in the book called for cous-cous, but I HATE cous-cous. However, I LOVE quinoa (which has the consistency of cous-cous, but with much more protein), so I always make that instead with this chicken recipe. I found out that I love quinoa cooked AND raw. It actually makes a terrific salad once it's been sprouted. Wonderful stuff. I'll have to fix that and post the instructions next week (from my Raw Food Real World recipe book). Stay tuned for that! In the meantime, I recommend clicking on the link for the cookbook and checking it out! Usually when I buy cookbooks I may find a handful of useful recipes that fit my diet and actually taste good. Eating For Life is LOADED with them. All the recipes promote weight loss. I mean, look at this dinner, it's almost too pretty to eat! :)

Gorgous Leaves Bundle Revisited

Yestday's Freebie Friday on a Monday projects were so fun and this set is SO BEAUTIFUL in it's simplicity!  It reminds me of a long-retired stamp set from Stampin Up!.  I was inspired to re-create the projects that I made with it once upon a time.  So here we go.... SIMPLE projects when you need a quick "hello" or an even quicker heartfelt sympathy card: I was DEFINITELY on a Bumblebee and Cajun Craze kick yesterday!  I can't stop/won't stop!  LOL!  To be fair... I had extra leaves die cut and didn't want anything to go to waste!  A quick speckle backdrop in Bumblebee then a quick "hello" greeting from the Biggest Wish in Cajun Craze with the Cajun Craze leaf popped up on a Basic White cardbase.  PERFECTION! Got My Healthy Game On.... YO!

So, I've found some new fun in fitness.... the Wii! First of all, let me start by saying that when you change your lifestyle from sedentary to active, it is important to incorporate changes that will stick. And for me... this Wii will be sticking around for quite some time! The fact that this video game is played by your body movements alone should be winning the Pulitzer Prize for turning around the obesity epidemic in this country by introducing physical activity BACK into our kids lives! Whew! That was a super run on sentence! hahahaha! Earlier this week I got the balance board for the Wii. It included a game called Wii Fit. I have read quite a few reviews on the Wii Fit complaining that it doesn't include full exercise segments.
