Banana Cupcakes

Here is a REALLY yummy and healthy recipe for Banana Cupcakes! This is a cake batter that is made from scratch, but is super easy. It makes me wonder why we don't make cakes from scratch anymore!

Banana Cupcakes

  • 2 1/4 Cups whole wheat pastry flour
  • 2 1/2 tsp. baking powder
  • 1 1/2 tsp. baking soda
  • 2 1/4 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground cloves
  • 1/2 Cup agave nectar or maple syrup
  • 1 small zucchini julienned
  • 3/4 Cup unsweetened applesauce
  • 1 whole egg
  • 1 egg white
  • 3 Cups mashed banana
  • 3/4 Cup raisins (optional)
  • 3/4 Cup chopped walnuts (optional)
  • 1/2 Cup flax meal (optional)
Preheat oven to 350 degrees. Mix dry ingredients together; set aside. Mix the agave nectar or maple syrup and applesauce together. Beat the eggs into the wet mixture. Stir the banana, zucchini, raisins and walnuts into the wet mixture. Add wet mixture to the dry and mix well. Fill cupcake wells 3/4 full and bake for 30-35 minutes. Batter can also be placed into into a 13 x 9-inch pan and baked for about an hour for an amazing cake.

Here is a great option for your cupcakes! How about a sweet, natural glaze?

Glaze

2-3 Tbsp room temperature spring water
2 Tbsp organic maple syrup
1/2 Cup sucanat powder

Blend ingredients together (I use the Magic Bullet)until sucanat is dissolved. Dip each cupcake top into the glaze mixture and allow to dry.

Wow! That is a really great question! Because I focus on portion size and eating whole foods... I don't really count or keep track of calories. But your question is super good, so I am devoting an entire blog post to you...stay tuned (I wish I had your name to thank you!;)

Gorgous Leaves Bundle Revisited

Yestday's Freebie Friday on a Monday projects were so fun and this set is SO BEAUTIFUL in it's simplicity!  It reminds me of a long-retired stamp set from Stampin Up!.  I was inspired to re-create the projects that I made with it once upon a time.  So here we go.... SIMPLE projects when you need a quick "hello" or an even quicker heartfelt sympathy card: I was DEFINITELY on a Bumblebee and Cajun Craze kick yesterday!  I can't stop/won't stop!  LOL!  To be fair... I had extra leaves die cut and didn't want anything to go to waste!  A quick speckle backdrop in Bumblebee then a quick "hello" greeting from the Biggest Wish in Cajun Craze with the Cajun Craze leaf popped up on a Basic White cardbase.  PERFECTION! Okay, as with yesterday's projects, the sentiment is from the recently retired SAB Delicate Dahlia's set, but you could use ANY sympathy sentiment you have in your stash.  Unlike in the past when I had to mask off the center rectangle...

New Year New Copic Class

Ok, so it's another year and we're looking forward to the year ahead, but if you're anything like me, you haven't even begun to sift through all of your 2010 stuff yet and it's time to start a new year. MY VERY FIRST CRICUT CARTRIDGE GIVE AWAY!

Ok ... so the time has come. I've got some BRAND NEW, NEVER BEEN USED, STILL IN THE PLASTIC Cricut Cartridges to give away over the next couple of months and it starts with one of my ALL-TIME FAVORITES...... Hannah Montana! YAY!
