Stuffin Muffins... That Rachel Ray

So I was watching the Thanksgiving specials on Food Network last week and saw Ms. Rachel Ray make "Stuffin Muffins". Ok, let me just say, "BRILLIANT!" This isn't your ordinary, run of the mill brilliant either. This is the "I just discovered that you can put anything on a stick, deep fry it, serve it at a fair and make a mint" brilliant.

A brief shot appears on my TV screen showing the end result of these "Stuffin Muffins" and I'm glued to the set. It's so simple.... instead of preparing a whole casserole dish of stuffing, or even trying to figure out what to do with the left overs from the stuffed turkey, squash them into balls and press them into a muffin pan.

Now she made this apple stuffing that she put into a muffin pan, but this was for Thanksgiving and our house DOES NOT waste a perfectly good eat-till-you-wanna-puke day on anything as healthy as apples. Oh no, for us it's bread crumbs, butter, sausage, butter and butter. And she seemed to fill the muffin pan pretty loosely. I found that my muffins turned out more like muffins by forming a ball with the left over stuffing and then really pressing the "dough" into the muffin pan. I made sure not to smoosh the tops too much as I still wanted the muffins to look like stuffing. Anyhow, here is why I'm so psyched about the brilliance that is stuffing muffins. FOOD SAVER!!!! That's right, I can break out my food saver and EASILY package individual servings and stick them in the freezer. And the fact that my stuffing is now mobile is not lost here. Oh no, I now have visions of mini turkey sandwiches on stuffing muffins (with a dollop of gravy inside of course) being thrust into hungry football game viewer's hands made with a meal that I already slaved over day's or weeks or months ago. NOW THAT'S what I love! I cook once that provides many meals down the road. Now that's working smart! Didn't I say this was brilliant?!? Time to give this idea a go on my bread pudding. Puddin Muffins here I come!!! Just brilliant!

Gorgous Leaves Bundle Revisited

Yestday's Freebie Friday on a Monday projects were so fun and this set is SO BEAUTIFUL in it's simplicity!  It reminds me of a long-retired stamp set from Stampin Up!.  I was inspired to re-create the projects that I made with it once upon a time.  So here we go.... SIMPLE projects when you need a quick "hello" or an even quicker heartfelt sympathy card: I was DEFINITELY on a Bumblebee and Cajun Craze kick yesterday!  I can't stop/won't stop!  LOL!  To be fair... I had extra leaves die cut and didn't want anything to go to waste!  A quick speckle backdrop in Bumblebee then a quick "hello" greeting from the Biggest Wish in Cajun Craze with the Cajun Craze leaf popped up on a Basic White cardbase.  PERFECTION! Okay, as with yesterday's projects, the sentiment is from the recently retired SAB Delicate Dahlia's set, but you could use ANY sympathy sentiment you have in your stash.  Unlike in the past when I had to mask off the center rectangle...

Got My Healthy Game On.... YO!

So, I've found some new fun in fitness.... the Wii! First of all, let me start by saying that when you change your lifestyle from sedentary to active, it is important to incorporate changes that will stick. And for me... this Wii will be sticking around for quite some time! The fact that this video game is played by your body movements alone should be winning the Pulitzer Prize for turning around the obesity epidemic in this country by introducing physical activity BACK into our kids lives! Whew! That was a super run on sentence! hahahaha! Earlier this week I got the balance board for the Wii. It included a game called Wii Fit. I have read quite a few reviews on the Wii Fit complaining that it doesn't include full exercise segments. In my opinion this game is lacking nothing because it is simply introducing fun exercise into our inactive lives and into our child's life .
