Birthday Extension

 If I would have known that my birthday would get extended, I would have gone gluten free YEARS ago!  hahahahahahaha!  Here's THIS year's birthday lasagna made for me the day AFTER my birthday.  My husband has made me lasagna for my birthday every year for the past 18 years.  Its one of those traditions that I thought I was going to have to say good-bye to when I first started down this gluten free path.  What I know now, but didn't know then, is that not all pasta contains gluten.  In fact, I think the lasagna this year is better than any of the lasagnas from the past.  Why was THIS one so much better???  Well, for starters, this lasagna is WAY more colorful because along with diced tomatoes, it also has zucchini and spinach.  The pasta ended up being super easy to use because it was a no boil rice noodle.  This lasagna is sheer perfection... and organic too!!!  Can you see FOUR layers of ooey gooey goodness???  Oh how I wish you all could see this in person.  The picture can not do this birthday lasagna justice.  All the Italian spices mixed with the ricotta, asiago and mozzarella cheeses mingling with the garlic.... WOW!  This gluten free thing is becoming more and more attractive every day! 

Now I just need to cut up the rest into single servings and FREEZE it... otherwise, I WILL keep eating it.  Its just so good!!!

Past 7 Days....

Seriously Crazy!

Oh man! Look at the fridge in my garage. And that's only about half of it!!! The rest of my Bountiful Basket is in the fridge in my kitchen. Crazy! I'm here to tell you about my very first experience with Bountiful Baskets . I was told that Bountiful Baskets was a great way to save money on quality produce, so I thought I'd give it a try and see; and you can tell by the pic, that was today! Well, my fridge is PACKED! And every bit of it is organic. Look at how nice all of that produce looks. It's beautiful. After signing up on the website (click link above), I started reading that you can volunteer at the pick up site and help distribute; for your work, you can get extra produce. That was a nice bonus, but today I volunteered with the nicest people and to be honest I had so much fun, I would have done that for free. Needless to say (but I will say it anyway) I will be doing this again in 2 weeks. So here's the lowdown. For $25 dollars, I got what you see in the pic ...

Gorgous Leaves Bundle Revisited

Yestday's Freebie Friday on a Monday projects were so fun and this set is SO BEAUTIFUL in it's simplicity!  It reminds me of a long-retired stamp set from Stampin Up!.  I was inspired to re-create the projects that I made with it once upon a time.  So here we go.... SIMPLE projects when you need a quick "hello" or an even quicker heartfelt sympathy card: I was DEFINITELY on a Bumblebee and Cajun Craze kick yesterday!  I can't stop/won't stop!  LOL!  To be fair... I had extra leaves die cut and didn't want anything to go to waste!  A quick speckle backdrop in Bumblebee then a quick "hello" greeting from the Biggest Wish in Cajun Craze with the Cajun Craze leaf popped up on a Basic White cardbase.  PERFECTION! Okay, as with yesterday's projects, the sentiment is from the recently retired SAB Delicate Dahlia's set, but you could use ANY sympathy sentiment you have in your stash.  Unlike in the past when I had to mask off the center rectangle...
