My Little Hunger Experiment



Hello my pretties!!!  Take a look at what I had for dinner!!!  Stuffed jalapenos wrapped in bacon.... and they were so so good!  I'll share the recipe here in a sec, but what I really wanted to talk about was this business about fat. 

Fat does not make us fat?  Could this be real???  How could that even be possible when everyone from the time I started going to school has been telling me that a low fat diet is the way to maintain weight and stay healthy???  Could it be that dietary fat (real fats, not lab-created crap that the body doesn't recognize) is actually the key?

I recently watched Fat Head, a documentary that debunked ANOTHER documentary I watched last year called Supersize Me.  In Supersize me a guy eats nothing but McDonalds for 30 days and "supposedly" ruins his health by the end (after watching Fat Head I REALLY questioned the authenticity of Supersize Me).  Do I believe that a diet of really bad food choices from McDonald's can ruin someone's health.... ABSOLUTELY!!!  I personally stay FAR away from "McDump's", but watching the dude in Fat Head do the same thing while purposefully trying to make good food choices was INCREDIBLE!  Not only did he prove that it can be done, but he ended up IMPROVING his health by the end.  WHY.... turns out that he stumbled upon some pretty great science involving lowering carb intake and increasing fat.  Science that I'm now reading more about in Wheat Belly.  Turns out that healthy dietary fat improves our health, satiates and TURNS OFF HUNGER.  So.....I ran a little experiment today.  I limited my diet today to ONLY meat, veggies and cheese.  I cut out all grains and sugar to see how I felt.  I have to say, I FEEL FABULOUS!!!!  It really does work!  Your mood levels out, you don't feel "heavy" or "tired" after eating and I wasn't hungry at all today.  It is funny how I would dread making a home cooked meal at the end of a busy day at work, but today I had energy enough to make dinner AND lunch for tomorrow.  It appears there might be a snowball effect happening here, but I truly will need more than one experiment to come to that judgment.

Welp, as promised:  Bacon Wrapped Stuffed Jalapenos

6 Jalapenos halved lengthwise with core and seeds removed.  (TRUST ME, WEAR GLOVES FOR THIS STEP)
4 Tbsp. Cream Cheese
4 Tbsp. Goat Cheese
4 Tbsp. Grated Parmesan Cheese
1 handful of chopped cilantro
1 large roma tomato chopped into small pieces
12 thin slices of bacon

Preheat oven to 375 degrees.  Combine cheeses, cilantro and tomato.  Spread cheese mixture into jalapeno halves.  Wrap with bacon and place in a baking dish.  Bake for 20 minutes or until the bacon is fully cooked.  Make sure to use thin bacon.  I used thick-cut apple wood smoked bacon (cuz that's my fave) and it took FOREVER to cook.... something like 40 minutes, and the bacon STILL wasn't crispy.  Thinner bacon means shorter cooking time and crispier bacon.  If you've ever ordered stuffed jalapeno peppers at a restaurant, be prepared to be RUINED!  You will never be able to order from a restaurant again.... they are just that good!!!

I served these with steamed asparagus and that was dinner.... YUM!

Past 7 Days....

MY VERY FIRST CRICUT CARTRIDGE GIVE AWAY!

Ok ... so the time has come. I've got some BRAND NEW, NEVER BEEN USED, STILL IN THE PLASTIC Cricut Cartridges to give away over the next couple of months and it starts with one of my ALL-TIME FAVORITES...... Hannah Montana! YAY! The Old Clunker

A few years back I received a Creative Zen Micro Photo for Christmas. It was wonderful! The fact that I could finally carry around all my music in a super small (or I thought at the time)2.25" x 3.5" music player was sheer freedom from carrying around that old, large, portable cd player and I won't even go into the tons of music cds that also had to go along for the ride. Ok... so I'll mention them briefly, hahahahaha! And I was also surprised by how much lighter this music player was. At 5.5 oz., wearing it fashionably on an armstrap to the gym put me in the leagues with the top fitness buffs. Then something shifted... I was no longer hip, or in, or cool anymore. Suddenly everything shrunk and my music player was now a gigantic dinosaur! What the heck?!? Now everyone was sporting music players that were as big as the face of a watch and were a million times lighter than mine. All of a sudden I was back in the 7th grade trying to convince my mom to buy me the latest

The Inventor Of the TV Dinner Should Be Slapped!

Close observation of my eating shows that I can scarf my tuna casserole at an alarming rate. I sit in front of the TV to eat my dinner and 5 minutes later I am pushing the plate away with little to no memory of ever have eaten. That is interesting to me because, you see, I LOVE FOOD! I also LOVE being thin. These facts SHOULD come to life by the knowledge that if I took smaller bites and chewed thoroughly , not only would I get to enjoy my food that much longer, but I would also be burning more calories (yes, the activity of chewing burns calories!!!!)! And on top of THAT amazing knowledge, my body would also be able to process the food I eat much better therefore more of the food I consume would be utilized to help build my lean mean body. So what the heck is up???? Why DON'T I slow down my eating knowing all these amazing benefits? What's causing this little glitch? Those are the very questions I asked myself at the start of this year. I knew the answer before I ever wrote th
