I Can Do This


Please believe me when I say that this picture DOES NOT do this dish justice!!!  Today's gluten free dish is brought to you by the letter Y for FREAKIN YUM!!!!  It TOTALLY looks like I'm scarfing down on some pasta but its not.....it's spaghetti squash.  Now I'll be honest, the first time I made spaghetti squash I didn't like it.  I cut it in half, scooped out the seeds and baked it (skin side up) a LITTLE too long and it came out mushy like a baked potato.  It was not appetizing at all.  I also slathered it with hot marinara sauce which didn't help even in the slightest.  But THIS rockin creation.... I could eat this every single day.  I am so excited to find a gluten free dish that is actually better than its gluten counterpart.  I wish I had a name for this dish, but I don't.  This is literally something I threw together praying to baby Jesus that the second time would be a charm.  Thank the dear Lord it was!!!

2 baked chicken breasts cubed
1 spaghetti squash halved and seeds removed
Butter 1/4-1/2 stick of butter (this will depend on how large your squash is)
1/2 tsp. garlic powder (I actually added more like 1 tsp. but I LOVE garlic)
Salt and pepper to taste
Splash of worcestershire sauce to taste
1 tsp. Dijon or hot mustard
1/2 Cup grated parmesan cheese
Additional veggies of your choice (optional)

Preheat oven to 375 degrees.  Place both spaghetti squash halves on baking sheet skin side up.  Place in oven and bake for 20 minutes.  After 20 minutes, turn the pan so that all sides bake evenly.  Bake for 8-10 more minutes until the flesh is tender but still firm.  Trust me....it is not good mushy!  Take a fork and scrape the flesh out of the skin into a large bowl.  The flesh will resemble spaghetti.  Add butter to the hot squash and stir until butter is melted and evenly coats the squash.  Add in chicken, garlic, mustard, cheese, worcestershire sauce, salt and pepper combining well and serve hot.  Honestly, this one turned out so amazingly good.... too bad it is seasonal or I'd keep it on the weekly menu!!!  BTW... be sure to use a HUGE bowl!  This makes A LOT!

NAILED IT.... Sort Of

 
 THIS awesome yumminess is what I had for dessert tonight thanx to my super awesome Pampered Chef lady.  Why that is important is because not only did she share the original recipe for this low-cal dessert that I "frankenfixed" with my de-glutening super hero powers, but she also supplied me with THAT AWESOME square brownie pan that I love so much and use for EVERYTHING!  I have used this thing for mini single serve quiches, bacon bowl breakfast cups, single serve lasagna and, of course, brownies.  But THIS wonderful decadence is by far my best masterpiece!!!!
 
My Pampered Chef lady posted on her facebook page a recipe for a 33 CALORIE CHEESECAKE!  And added, "Let the Brownie Pan help you with your New Years Resolution!"  Well I immediately noticed that the recipe contains sugar and gluten.... the two things I swore to avoid as my New Year's resolution, but I have the pan so away I went "frankenfixing" this recipe.  My gluten free, low sugar changes are in PINK:
 

 INGREDIENTS:
3/4 Cup nonfat cottage cheese...

2/3 cup nonfat plain yogurt (I used Chobani Greek Yogurt... higher in protein)
1 TBS flour (I used Bob's Red Mill Gluten Free All Purpose Baking Flour)
2 TBS sugar (I used Truvia Baking blend.  When using Truvia, go to 3 Tbsp. TRUST ME)
1/4 tsp salt
4 egg whites
Juice from 1/2 a lemon
1/2 cup assorted fresh berries
(I used frozen organic cherries)

(I added 1/4 tsp. vanilla extract)

 DIRECTIONS:
1. Place all ingredients except for eggs and fruit in the blender or food processor and whip until the batter is smooth.
2. Now add the eggs and give it a few pulses.
3. Finally, add the fruits and gently mix them in with a spoon. Do NOT blend!
4. Spray the bottom of your pan with some cooking spray or lightly cover with oil. (I used coconut oil)
5. Pour the batter in.
6. Place the pan into your oven which should be set at 350 degrees. The suggested time for cooking is around 30 minutes (I baked 40-45 see below) but check frequently to make sure the cheesecake does not brown or dry out.
7. When done, serve either super hot straight out of the oven or chilled in the fridge. Enjoy!
8.  Because I only used 2 Tbsp. of Truvia, my cheesecake wasn't very sweet so I made a compote to put over top using 1/2 C. frozen cherries, 1/2 C. water and 2 Tbsp. Truvia.  I simply heated all three ingredients until I got a cherry syrup.  That sweetened up this dessert nicely.  TURNED OUT PERFECT.... but it was touch and go for a second.... keep reading.

So I filled the wells to just over 3/4 full and BOY did they rise.  I thought maybe I had goofed and filled the wells too high but nope....
 
 
When these babies are done they tell you because they shrink, the edges turn a beautiful golden brown and pull away from the sides of the wells.  I could have used this little bit of info because I ate one of the cheesecakes after pulling them out of the oven at the 30 minute baking mark and the cake was not cake at all.... it was flan.  NOT what I was expecting.  I thought for sure I messed it up with my "frankenfixes", but it turns out that another 10 minutes in the oven and these babies were PERFECT.... well, sort of.  The next time I make these I will be sure to use the 3 Tbsp. of Truvia instead of 2 that way I can nix the compote. But the compote gave it JUST what it needed to be PERFECTION!!!!  This one is DEFINITELY a test kitchen SUCCESS!!!!

I Could Easily Time Warp

 
A friend of mine just posted the wildest thing I've ever seen on Facebook.... it is an excerpt from The Good Wife's Guide of 1955 (click on the pic to enlarge... really, do it)!  Now while most would get a pretty good laugh since women have gained much ground on the road to equality, it is THIS woman's opinion that we could stand to take at least one step back.

Don't get me wrong.... treating your spouse like a possession or a maid is NEVER ok.  I mean, some of the items on this Good Wife's list are SOOOOO far out there, but some of them could stand a little rehash.  I have a little story of a couple at the top of their game financially, both with thriving careers but a struggling relationship when the housing market crashed and one of their careers came to a screeching halt. Yes, that would be mine.  So suddenly I was at home with not much to do but try to find ways to save money (we did just lose half of our household income) and make meals.  And something really weird happened.  OUR RELATIONSHIP GOT BETTER.

I realized that for years we would both come home and complain about our days.  Always attempting to unburden ourselves when the other person just wasn't in a place to be able to receive or listen because they too were trying to unburden.  The little time we had together wasn't quality at all.  Most of the time we were grumpy. But with me taking care of the house and the hubs coming home to the smell of dinner waiting, something shifted.  I noticed that he stopped coming through the door with burdens.  Suddenly he'd walk through the door with the stereotypical 1950's "Honey I'm home!"
usually followed by, "Something smells good" or, "Is that cake I smell?" 

HOW can you be in a bad mood when you open the door to the smell of fresh baked bread or chocolate cake????  If you could come home to this type of aroma therapy every day, wouldn't that be something you looked forward to?  Even the drive home.... would you think about the burdens of your day or would you anticipate what wondrous smell would greet you at the door?  And I discovered that I became a mirror.  I couldn't wait for him to get home!  He was suddenly always so happy with compliments on the house and the smells.  Oh sure.... I'd EVENTUALLY hear about the bad stuff that happened during his day, but suddenly the bad stuff stopped taking center stage.  He was suddenly happy to see me and I was happy to see him and we'd talk about wonderful stuff like upcoming plans for weekend and funny stuff we'd experienced before dredging up anything bad we encountered during the day.  And, dare I say, the bad stuff seemed to dwindle a little.

So before anyone leaves me ugly remarks about "how dare I suggest we take a step back for women's rights", please know that I'm coming from a place where I want my marriage to last forever.  I've lived during the times of plenty when we both had more money than sense and also during times of much less and I learned that sometimes it is ok for strong, independent women of LEADERSHIP to stop attaining and instead just cook a good meal.  The way to a man's heart really IS through his stomach... or rather through his nose.

My Little Hunger Experiment



Hello my pretties!!!  Take a look at what I had for dinner!!!  Stuffed jalapenos wrapped in bacon.... and they were so so good!  I'll share the recipe here in a sec, but what I really wanted to talk about was this business about fat. 

Fat does not make us fat?  Could this be real???  How could that even be possible when everyone from the time I started going to school has been telling me that a low fat diet is the way to maintain weight and stay healthy???  Could it be that dietary fat (real fats, not lab-created crap that the body doesn't recognize) is actually the key?

I recently watched Fat Head, a documentary that debunked ANOTHER documentary I watched last year called Supersize Me.  In Supersize me a guy eats nothing but McDonalds for 30 days and "supposedly" ruins his health by the end (after watching Fat Head I REALLY questioned the authenticity of Supersize Me).  Do I believe that a diet of really bad food choices from McDonald's can ruin someone's health.... ABSOLUTELY!!!  I personally stay FAR away from "McDump's", but watching the dude in Fat Head do the same thing while purposefully trying to make good food choices was INCREDIBLE!  Not only did he prove that it can be done, but he ended up IMPROVING his health by the end.  WHY.... turns out that he stumbled upon some pretty great science involving lowering carb intake and increasing fat.  Science that I'm now reading more about in Wheat Belly.  Turns out that healthy dietary fat improves our health, satiates and TURNS OFF HUNGER.  So.....I ran a little experiment today.  I limited my diet today to ONLY meat, veggies and cheese.  I cut out all grains and sugar to see how I felt.  I have to say, I FEEL FABULOUS!!!!  It really does work!  Your mood levels out, you don't feel "heavy" or "tired" after eating and I wasn't hungry at all today.  It is funny how I would dread making a home cooked meal at the end of a busy day at work, but today I had energy enough to make dinner AND lunch for tomorrow.  It appears there might be a snowball effect happening here, but I truly will need more than one experiment to come to that judgment.

Welp, as promised:  Bacon Wrapped Stuffed Jalapenos

6 Jalapenos halved lengthwise with core and seeds removed.  (TRUST ME, WEAR GLOVES FOR THIS STEP)
4 Tbsp. Cream Cheese
4 Tbsp. Goat Cheese
4 Tbsp. Grated Parmesan Cheese
1 handful of chopped cilantro
1 large roma tomato chopped into small pieces
12 thin slices of bacon

Preheat oven to 375 degrees.  Combine cheeses, cilantro and tomato.  Spread cheese mixture into jalapeno halves.  Wrap with bacon and place in a baking dish.  Bake for 20 minutes or until the bacon is fully cooked.  Make sure to use thin bacon.  I used thick-cut apple wood smoked bacon (cuz that's my fave) and it took FOREVER to cook.... something like 40 minutes, and the bacon STILL wasn't crispy.  Thinner bacon means shorter cooking time and crispier bacon.  If you've ever ordered stuffed jalapeno peppers at a restaurant, be prepared to be RUINED!  You will never be able to order from a restaurant again.... they are just that good!!!

I served these with steamed asparagus and that was dinner.... YUM!

Gluten Free And Lovin It



I've been gluten free in short bursts on and off for years, but I think this is the first time I've ever accomplished STAYING gluten free for a long period of time.  I'm coming up on a whole month and it feels WONDERFUL!!!!  I had no idea how bad I really felt.... all the time.  Sometimes you don't know how bad you feel until you start feeling good.  Well now I'm learning that it is a problem A LOT OF FOLKS might be having.  I just started the book Wheat Belly by Dr. William Davis after hearing Dr. Wayne Dyer mention it on his New You Now video interview over at Hay House (click HERE to watch it) and then another friend of mine read it, cut out gluten and ALSO noticed a big change.  Well, with everyone getting these amazing results, I thought it would be worth a little shout out here on my blog.

Just what if you could feel better?  What if you could have more energy?  What if mysterious symptoms weren't so mysterious after all?  For me, it is worth a 6 month trial to really see.... what about you. 

If anyone else out there has read Wheat Belly, I'd love to hear your thoughts on it!

I've Gone Stampin Up Crazy

So this is me getting back to my roots I guess because I'm suddenly Stampin Up CRAZY!  Once upon a time, a number of years ago, I started an innocent card making hobby with a Stampin Up demonstrator friend of mine.  Well, those seemingly innocent little stamp orders have now turned into a stamp collection of 300+, paints, inks, markers, paper, die cutting machineS, tools, glitter, embossing powder, stickers, buttons in every color and an endless array of adhesives to stick anything the mind can fathom and plenty more that I don't have room to mention (ahem... the sewing machine devoted to sewing paper).... so you wouldn't think I need more.  But here I sit lamenting ANOTHER Stampin Up order that I just placed for more paper I JUST HAVE TO HAVE!  Oh sure, I justify it with, "It's a retired item.  It's on clearance and I may not be able to get it anymore (REMEMBER THE ROCKABILLY FAMINE???)!!!  I need it to make a very important project!"  Well, that last one is sort of a really good point.  You see, in a few months I'm gonna be a grandma and I've got some crafty ideas in the works that all started with a little tri-fold project I once made..... at a Stampin Up Class.

Yep... my grand baby is a girl and I'm SOOOOOO excited!  I can't wait to get to know this little one and after years of collecting craft supplies I'm realizing that I'm horribly lacking in baby stuff!!!  I feel another Stampin Up order coming on!

All I did was take the flourish from the Fresh Vintage stamp set and stamped it off the page to create a semi-border.  I LOVE how it turned out!  Thanx to my friend Dana Edwards (ANOTHER Stampin Up enabler demonstrator who showed me how to make this GORGEOUS tri-fold), you can check out her blog HERE.  If you're ever in the area and can take one of her classes, I HIGHLY recommend it!!!

Halloween In January

Just a quick one today.  And I'm not off my rocker (well not anymore than usual).  This post is because my craft room was in storage for the bulk of last year and I'm becoming reacquainted with everything, so when my friend Cindy came over yesterday with all her Stampin Up goodies and a box of Halloween stuff.... well I couldn't resist.  COME ON.... HALLOWEEN?!?  You KNOW I couldn't!!!!

So have you guys seen the Stampin Up Chalk Talk die set?  Isn't it INCREDIBLE????  I jumped on Pinterest to see what people were doing with that set and here's what I came up with (see how I took complete credit for someone else's design ideas.... just kidding, you can check out the designer's creation HERE, this is just my interpretation):


Click on the link above to see how to make Nicole's little Halloween goodie box.  For mine I used Cindy's pre-embossed web card that she challenged me to do something with (I hope she wasn't expecting a completed card)... hehehehe....


I punched out three tags from the Chalk Talk die set, inked the edges with memento black tuxedo and stamped my Halloween sentiment from Tickled Pink Stamp's Halloween Sentiments that I splatter stamped using Close To My Heart's You Rock splatter stamp in memento's lady bug.  I threw on a black ribbon and a Jolee's Boutique dimensional glitter spider and called it GREAT!

Happy Halloween Everybody!!!  And thank you Cindy for hanging out with me and getting my juices flowing again.  I HAD A BLAST!!!!

Gluten Obsessed

I've dealt with gluten intolerance for a large portion of my life and recent "attacks", for lack of a better word, have caused me to REALLY think about my lifestyle.  I've known that I shouldn't eat gluten, but was always able to tolerate it in small amounts and even when I would splurge and over-indulge I knew that I would feel bad for it later.  But suddenly, "later" is now minutes after consuming a meal containing gluten.  My latest attack ended with me feeling like I was having a heart attack and my hands swelled up so bad that my knuckles were white.  I am SUDDENLY terrified of gluten.  It's like my body is saying enough is enough.  So I gathered my gluten free cookbooks and began putting a meal plan together, but I really wasn't "feeling it" if you know what I mean.  All the recipes that I've collected are good, but I was truly wanting to find GREAT food to inspire me to change and change for good.  Let's face it, I'm having a hard time staying away from gluten.... it's in all my favorite foods!!!  Enter DECADENT CHOCOLATE CAKE!!!

Ok, salvation!  And single serving at that!   Uh-huh, that'll do her!  For most people you will have to do a little shopping to put this cake together.  For me (the weirdo with the nut milk maker), I had EVERYTHING in my pantry.


I make my own almond milk so I have PLENTY of almond pulp (pulp???) left over that I dehydrate and then run through the Vitamix using the dry blade pitcher to make my own almond flour... which is the first ingredient on the list.  Here goes:

1/2 C. Almond Flour
1/4 C. Truvia Baking Blend
3 Tbsp. Unsweetened Cocoa Powder
1/8 tsp. Baking Powder
1/4 tsp. Baking Soda (recipe calls for 1/2 tsp. but I only used 1/4 and it came out perfect)
1/4 tsp. Salt
2 Tbsp. Coconut Oil
1 Egg
2 Tbsp. Half and Half
Whipped Cream (reserved for topping)

In a large bowl mix dry ingredients.  In another bowl mix wet ingredients (I had to melt my coconut oil because it is winter right now and is more of a butter until summer months when it is hot here and my coconut oil liquefies).  Combine wet mixture with dry mixture.  Put a heaping 1/4 cup of the batter into a coffee mug and microwave on high for 1 minute 10 seconds.  Allow to cool for one minute.  Plate, top with whipped cream and serve.

This AMAZING recipe came from Jorge Cruise's newest book called Happy Hormones Slim Belly.  The cake is honestly the best chocolate cake I've ever had.  I actually PREFER the almond flour in this cake and it is SO spongy!!! 

Really, what a crazy place to find INCREDIBLE gluten free recipes.  Nowhere on the cover of this book does it mention gluten free.  I truly just stumbled on this book and it ended up having the very things I need to inspire a life change... and hey, I might just be able to control my hormones in the process.  For anyone out there looking for sugar free recipes, this is an EXCELLENT source for that as well.  I cannot tell you how thankful I am to have found this book.  I've been 100% gluten free for 5 whole days now and am excited for gluten free day number 6.  I have NEVER felt that way about living without gluten.  For anyone out there that might have struggled like I did, there really is hope.  I WISH Mr. Cruise would change the cover of this book to advertise this book contains WONDERFUL gluten free recipes!  100 High Fives for you Mr. Cruise!!!

WINNER WINNER PIZZA DINNER!


This is truly a thing of beauty.... and the hubs went back for seconds.  Yep, I'd have to say that this cauliflower pizza crust is a HUGE winner.  Click HERE for the cauliflower crust recipe I used.

For the first one I've ever made, I am so proud to say that IT ROCKED!!!  But, even though it was PRACTICALLY perfect, a couple of changes WILL be made to the next one so I thought I would share those with you guys in case anyone out there is planning on attempting this.

So, this crust ended up being a tad bit drier than the real thing.  While you couldn't tell that it was made out of cauliflower AT ALL, a little bit more sauce is in order for next time around.  That being said, I'm reading online that if you omit the third egg and the 1/2 cup of gluten free all purpose flower, that will make the crust a bit "wetter".   And I also read that without those two ingredients, too much sauce will make it fall apart. I'll definitely be giving it a try to see how it turns out.  I already know I LOVE it the way I made it this first time (reminiscent of deep dish pizza crust), but I'm not opposed to running a little "test kitchen" to perfect this!

And finally, with all the healthy goodness that went into making the crust, I wish I would have spent some of that calorie savings on full fat cheese and real pepperoni.  Instead I used reduced fat mozzarella and turkey pepperoni which also added to the dryness.  But we'll see because honestly, eating this healthy pizza exactly the way it is suits me perfectly fine.  This pizza was so good, I don't think I'll ever miss the real thing.  I HIGHLY recommend giving this one a try!!!


***(pssst you'll have to run your own test kitchen as far as toppings go.  I didn't really measure any of it.  Wished I had though so I know how much more sauce to add the next time.)

Cauliflower Pizza Crust


THERE SHE IS!!!!  My very first 100% Gluten Free Cauliflower Pizza Crust!  Sorry about the hazy pic, I don't know if it was the camera on my phone, the steam from just being pulled from the oven,the lighting in my kitchen or a combination of them all, but if you click on the pick to enlarge you can see that it turned out PERFECT!!!  Honestly, I surprised myself.  When you make the dough it doesn't look like it should turn out this beautiful.  I haven't "officially" eaten it yet because I made it in advance so I can just throw the toppings on tonight after work and pop it into the oven.  But I DID sneak me a little edge and it is SOOOOO YUMMY!!!  I can't wait until the pizza is done with all the yummy toppings I got for it.  I even picked up some turkey pepperoni!  So here is how this pizza crust is made; you won't believe how easy it is!!!

Florets from on small head of cauliflower
1/2 cup Bob's Red Mill Gluten Free All Purpose Baking Flour
2 cups shredded mozzarella cheese
3 eggs
1/2 tsp Italian herb seasoning
Parchment Paper

Process cauliflower in food processor so it appears the consistency of ground almonds (pulsing for approx. 1 minute).  You want to be sure it is as fine as the food processor will make it.  In a large bowl combine all ingredients.  Spread out on a parchment paper lined pizza tray, stone or cookie sheet until the crust is thin and even (mine was about 1/4" and feel free to use your hands) and bake in a 450 degree oven for 15 minutes.  Flip the crust over and bake for an additional 5-7 minutes until both sides are golden.

To Make The Pizza

I'm topping mine with marinara sauce, mozzarella cheese, bell peppers, mushrooms, onion and pepperoni.  Once I've put all the toppings on, I will pop it into the oven on broil until the cheese is melted and my pizza looks like a pizza (approximately 6-10 minutes).  Stay tuned for the finished product!!!

Speed Clean Meet Super Sonic Clean

One of my last posts of 2013 was on tips and tricks for speed cleaning your home because I HATE cleaning, BUT THEN.....


the day before New Year's Eve I read a blog post all about cleaning, not speedily, but efficiently!  How you ask?  Well it is so simple, I am kicking myself for not thinking of it sooner.  CLEAN EVERY DAY!!!!  Not all day every day... that would be impossible.  But just clean SOMETHING for 20 minutes every day.  Eventually it all gets clean and then stays clean.  DOESN'T THAT SOUND LIKE NIRVANA?!?

So it couldn't be any more direct, this blog post is called:  How to Clean Your House In 20 Minutes a Day For 30 Days.  The author lives in an apartment and advises to clean the dishes you use after every meal so on top of the 20 minutes cleaning project outlined in the article I personally added 10 minutes to cover the dishes.  I am also splitting my cleaning into TWO half hour sessions every day for 30 days hoping that the remaining months of the year will end up just being 20 minutes every day.... YEP, STILL SOUNDS LIKE NIRVANA!!!!  So the article gives tips and outlines a 30 day chore chart that I think I will stick to once my initial 30 days is up (click on the link above to see the brilliant blog post), but for now here's what I'm doing and remember I only committed to 1 hour a day for 30 days.  Not too bad to have a spic and span house for the remaining 11 months.  So here goes....

  • 1/2 Hour Every Morning:  Make bed, wipe down master bathroom (after I've gotten ready for the day), put dishes from dishwasher away, fold and put away clothes in the laundry room.
  • 1/2 Hour Every Night:  Grab 1 load of laundry and put in washing machine.  Set kitchen timer for 30 minutes.  Pick one room and clean until timer goes off.  If the room is not complete, finish the next evening.  I have 4 bedrooms, 2 bathrooms, 1 living room, 1 family room, 1 dining room, a workout area, a kitchen and the hallways.  That is 12 areas to SCOUR over the course of 30 days.  That isn't bad at all.  And considering that I already missed two 1/2 hour cleaning sessions already this year, it MAY just take me every bit of those 30 days to get it done.  But the gold is at the END of the rainbow when everything is shiny and I can work on keeping that way with a simple 20 minutes a day.  COME TO ME NIRVANA!!! 
  • Once my half hour is up (a regular load of laundry doesn't typically run for longer than 30 minutes), I place the wet laundry in the dryer. 

Honestly, I think I just found the key to me liking cleaning.... 20 minutes a day!!!!

YAY 2014

Yes, yes... I know I've been away for quite some time.  Had a HARD tail end of 2013 with multiple moves, multiple surgeries and just as many nervous breakdowns!  WHEW!  Am I glad THAT'S over!


I joke about having nervous breakdowns, but then again sometimes my nerves got a bit frayed and threatened to break right there toward the end of the year.  So I'm here today to tell EVERYONE what got me through and share my most recent 'HIGH FIVE'!!!

So Hay House, the book publisher of one of my favorite people in the world, Dr. Wayne Dyer is hosting a "New You Now" event that kicks off in less than a week.  My guess is that Hay House will feature a good number of their published authors to sort of kick off book sales for the new year while at the same time sharing some insight and direction toward you reaching your full potential in this new year..... BRILLIANT IDEA!!!  My favorite of all is that RIGHT NOW they are featuring another life-changing video of a discussion with Dr. Dyer about starting this new year, being in "the now" (I LOVE, LOVE, LOVE this part) AND starting a gluten free lifestyle, and that is kind of a big deal for me.... especially right now.

So I'm going to back up here for one tick.  What I've failed to mention is that I suffer from chronic fatigue syndrome and folks with my condition are "sensitive" to gluten.  Don't ask me the how's or why's because I honestly don't understand the medical jargon with inflammation and breaking down proteins and whatnot. All I can tell you is that I ABSOLUTELY should be staying away from gluten because for me it causes horrible insomnia, skin issues, abdominal issues, brain fog, swelling and joint pain.  I mean it is ugly..... but not immediate enough that I stay away from gluten.  You see EVERYTHING I LOVE contains gluten!  And the horrible-ness that are my symptoms don't come on me like someone who is "allergic", it is a slow progression over time after consuming the gluten.  Sometimes, depending on the amount and frequency, I can eat the gluten and not really notice the effects.  And then there are times, like over the holidays when I cannot get away from gluten and I spend three whole miserable months HURTING myself.  Oh sure... I am completely in bliss while I'm eating the glutenous poison and then when the misery comes on I cry and ask, "WHY did I do this to myself???"  I do it every time.  So how apropos that at a time when I'm determining to quit the gluten for good that this should be the very thing that Dr. Dyer discusses!!!  THANK YOU GOD!!!  THAT my friends is a SERIOUS high five.  You have GOT to check out this video:  CLICK HERE!
